Ingredients:
- 1 cup multigrain flour (a mix of whole wheat, millet, barley, and oats)
- 1 cup fresh fenugreek leaves (methi), chopped
- 1/2 cup grated bottle gourd (lauki) or carrot
- 1/4 cup plain yogurt
- 1-2 green chilies, finely chopped
- 1 tsp ginger-garlic paste
- 1/2 tsp turmeric powder
- 1/2 tsp cumin seeds
- 1/2 tsp mustard seeds
- 1/2 tsp baking soda
- 1/2 tsp sugar (optional)
- Salt to taste
- 2 tbsp oil (plus extra for steaming)
- 1 tbsp sesame seeds (optional)
- Fresh coriander for garnish
Instructions:
- Prepare the Dough:
- In a large mixing bowl, combine the multigrain flour, chopped fenugreek leaves, grated bottle gourd (or carrot), and yogurt.
- Add the chopped green chilies, ginger-garlic paste, turmeric powder, salt, and sugar if using.
- Mix well and knead to form a soft dough. If the dough is too dry, add a little water. The consistency should be similar to bread dough.
- Shape the Muthiya:
- Divide the dough into small portions and shape them into cylindrical or oval muthiya (dumplings).
